Ingredients
1 Cup of Quinoa
1 Can of Black Bean
1 Can of Sweet Corn
1/2 Cup of Mild Pico De Gallo or Tomatoes and Onions
1 Minced Clove of Garlic
1 1/2 Cup of Veggie Broth or Stock
1 Bag of Spring Mix Lettuce
1 Avocado
1/2 Tbsp of Salt
1 Tbsp Black Pepper
Add one cup of water along with the one and a half cup of veggie broth or stock in a medium sauce pan.
Cover and bring to a boil, then lower heat.
When water is completely absorbed, then you can get started on the garnish. I personally like adding a couple leaves of spring mix on the plate. Then adding in the Mexican Quinoa mix and sprinkling a little bit of fiesta mix shredded cheese on top. Then add in some avocado slices and dig in.
